Coconut Oil ↔ Butter Substitution

If a recipe calls for butter and you want to use cannabis-infused coconut oil instead (or vice versa), here's what you need to know.
The Basic Ratio
1:1 by volume. Replace 1 cup butter with 1 cup coconut oil. This works for most recipes.
Why You Might Use Less
Coconut oil is 100% fat. Butter is only about 80% fat — the rest is water and milk solids. So coconut oil is richer, and some bakers reduce the amount by about 25% for a closer match:

For most cannabis edible recipes, the 1:1 ratio is fine. The reduced ratio is mainly for delicate baking where texture matters (pie crusts, shortbread).
Tips
- Solid vs. melted: Match the state the recipe calls for. If it says "softened butter," use coconut oil at room temperature (solid but scoopable). If it says "melted butter," melt the coconut oil.
- Refined vs. unrefined: Refined coconut oil has a neutral flavor. Unrefined (virgin) coconut oil tastes like coconut — great in some recipes, distracting in others.
- Salt: If using unsalted coconut oil to replace salted butter, add a pinch of salt.
- Creaming: Coconut oil can be creamed with sugar just like butter, but it's more temperature-sensitive. If it's too soft, chill it briefly first.
- Dairy-free bonus: Coconut oil makes any recipe dairy-free — useful for dietary restrictions.
For Cannabis Edibles
When a brownie or cookie recipe calls for ½ cup butter, just swap in ½ cup of your infused coconut oil. The 1:1 ratio keeps your dosing math simple — if your oil has a known potency per tablespoon, the serving count stays the same.
⚠️ Dosing reminder: When substituting infused oil into a recipe, calculate total mg THC in the oil used, then divide by the number of servings. Start low — 5–10 mg per serving is a common starting dose. Wait at least 2 hours before consuming more.
